The SANTOKU—literally “three virtues”—is Japan’s answer to the universal kitchen knife. Whether slicing vegetables, cutting meat, or handling fish, it delivers balance, precision, and comfort in one all-rounder tool. This 165mm (approx. 6.5") model from TAKEGAMI is crafted for those who want a knife that feels right from day one, yet rewards decades of sharpening.

Core steel: Yasuki Shirogami #2
At the center lies Yasuki Shirogami #2 steel from Shimane Prefecture—renowned for its purity and low impurity content. This traditional high-carbon steel takes an exceptionally fine edge and is easy to re-sharpen, making it the choice of many professional Japanese chefs.

Three-layer construction for durability
The Shirogami #2 core is sandwiched between layers of stainless steel. This 3-layer construction protects the core from corrosion while keeping maintenance simple for daily use. The outer stainless steel is given a hammered finish, a traditional texturing method that not only catches the eye but also helps reduce food sticking.

Geometry with purpose
The blade’s subtle curvature from tip to heel ensures smooth, controlled cutting. Its edge profile is tuned for versatility, allowing you to rock, push, or pull-cut with equal ease. The spine is gently rounded for comfort, while the blade face offers just the right taper for food release.

Handle: Honoki wood with buffalo horn ferrule
The octagonal handle is made from Honoki (朴の木), a traditional choice for Japanese knives. Light yet strong, Honoki offers a warm, natural grip, complemented by a buffalo horn ferrule for added strength and elegance.
